Violent Delight
1oz Fernet Branca
1/2oz Bar Hill Gin
1/2oz Plantation Pineapple Rum
1oz Yuzu Juice
1oz Spiced Pineapple Syrup*
1/2oz Coco Lopez
1 Egg White
Double dry shake and strain. Serve in a coupe glass and garnish with Korean Chili Threads.
Float Fernet Branca over top of cocktail.

8 Green Cardamom Pods - Cracked
4 Indian Long Peppers - Broken
Once toasted add…
1 Tsp Lavender Buds
Let Toast for 1 minute then add...
4 cups Pineapple Juice
2 cups Demerara
2 pinches Smoked Sea Salt
Put on medium heat until brought to a simmer. Bring back down to low heat for 30 minutes. After 10 minutes on low heat add 1 Tbl Chamomile and let steep for the last 10 minutes. Strain, chill and bottle.
