Violent Delight

  • 1oz Fernet Branca

  • 1/2oz Bar Hill Gin

  • 1/2oz Plantation Pineapple Rum

  • 1oz Yuzu Juice

  • 1oz Spiced Pineapple Syrup*

  • 1/2oz Coco Lopez

  • 1 Egg White 

Double dry shake and strain. Serve in a coupe glass and garnish with Korean Chili Threads.

Float Fernet Branca over top of cocktail.


Spiced Pineapple Syrup

Toast in a pan...

  • 2 Star Anise Pods - Broken

  • 8 Green Cardamom Pods - Cracked

  • 4 Indian Long Peppers - Broken

Once toasted add…

  • 1 Tsp Lavender Buds

  • Let Toast for 1 minute then add...

  • 4 cups Pineapple Juice

  • 2 cups Demerara

  • 2 pinches Smoked Sea Salt

Put on medium heat until brought to a simmer. Bring back down to low heat for 30 minutes. After 10 minutes on low heat add 1 Tbl Chamomile and let steep for the last 10 minutes. Strain, chill and bottle.
